Swimming Rodeo at the Zoo with Luke Skywalker while eating Fajitas

64. Go swimming once a month (4/29 & 5/29)

I am apparently slacking off a bit with my posts because I have two swimming adventures to blog about.
C is loving this addition to our Day Zero list. The boy is a bit of a fish. He is blowing bubbles like crazy, doesn't really react when he trips and falls face first into the water (he trips on the slide mat EVERY TIME), but still hates that big yellow bucket that drops water every few minutes.


He hates laying on his back, but we are making progress. I think it's the water in his ears that he doesn't like.


How do you like the "Mom, if you think I'm getting out you are crazy" look C gave me? Apparently he wasn't done swimming yet even though his lips were purple.

57. Give a gift a month (4/29)

January's gift was the gift of entertainment and company. My job rocks and they hook us up with all sorts of discounts and freebies. I managed to snag some free tickets to the National Western Stock Show. I decided to try to get four tickets so that we could have a double date with friends. I was lucky enough to get my first choice (the final rodeo and  finals) and four tickets so we asked S and J to join us. Little did I know, J had never been to a rodeo before and was really excited to go. Our seats were fantastic. We were in the lower section in the second row so we really couldn't have been much closer. The first bucking horse of the night shot some dirt at E and hit him right in the forehead. :) I'm not going to lie, it was pretty amusing. LOVE you, dear!


There was a boat-load of drama at the rodeo this time around. We went the week before as well because my little cousin was participating in the Muttin Bustin' and didn't see anything out of the ordinary. This time, one of the bucking horses fell over and landed on top of its rider, who miraculously ended up coming back later for a re-ride. One of the girls doing the barrel rides on her horse also fell off, but luckily was not injured. A really fun one was one of the bull riders who lost hold of his rope, managed to grab onto the tail end of the rope, and somehow stayed on the whole ride. The most entertaining oddity of the afternoon? One of the bull riders fell off and came ridiculously close to getting trampled. Although he avoided getting stomped on by the massive bull, he did get totally slapped in the face by the bull's junk...



65. Go to the zoo once a month (8/33)

D brought the girls and met us at the zoo for a zoo date again in January. We went first thing when they opened and actually stayed for more than an hour for once, until the little ones began to break down due to delayed nap times. We started at the baby lions because the girls hadn't seen them yet. They needed the inside scoop on where to find them since they are tucked away out of sight.


Awe! 


One of the adult males was hanging out right next to the windows for the kiddos to see.


We got to witness a few male peacocks courting a female. It was actually really sad because there was a really pretty young looking peacock with his feathers all spread out and fancy looking, then there was an older sad peacock with his feathers all plucked and missing trying really hard to keep up with the younger guy. He eventually moved on and started trying to court the geese... Sad day. :(


After watching the sea lion show we wandered around the Tropical Discovery.


Z and C were all about the Komodo Dragon and bullied other kids by pushing them out of the way when they tried to see the dragon. Oops... We really need to work on that...

It was another very successful zoo trip on a beautiful Colorado January day. Thanks for the date, girls!

100. Watch all the Star Wars movies (3/6)

Since we finally didn't have any evening plans this weekend, E and I sat down and watched Star Wars episodes IV-VI. I had seen these three a really long time ago, but agreed to watch them again along with the newest three to appease my dear husband. I actually remembered liking them so I didn't mind. Plus, I work in IT which means I really should be familiar with them because the guys in my field are known to spout Star Wars facts and jargon. Occupational Hazard. So Friday night, glass of wine in hand, we started the series. They are actually very entertaining with a lot of action, easy to follow story lines, etc. The best part about watching these movies, though? The animation that is a couple decades old. HILARIOUS. It is pretty amazing how far technology has come. It was nice to just hang out and watch movies with my hubby while drinking wine and munching on cheese and crackers, especially after such a crazy and hectic January.

83. Try a new recipe every month - Chicken Fajitas with Caliente Rub

Last night I made some Chicken Fajitas from a recipe out of Candice Kumai's cookbook Pretty Delicious. (Just pretend to be surprised, alright?)


The fajitas were spectacular, plus better for you than normal fajitas due to the addition of black beans and spinach to the filling. All of Candice's recipes include a "Food with Benefits" that adds extra nutrients to your meal, in this case the black beans and spinach. Another huge change that really blends with the flavors of the filling perfectly is topping the fajita off with a tablespoon of non-fat Greek Yogurt in place of Sour Cream. I love this recipe and will definitely be making it again.


Now, there is one HUGE lesson that I learned while making these fajitas. Make sure the house is well ventilated. Seriously. Open the windows, turn on the fan, and anything else that you can think of. The recipe calls for Ground Chipotle Peppers and when you throw the seasoning into the pan it fills the air with the taste and smell of the pepper. We were all coughing and dying the whole time I was cooking. I even made E take C out of the house so he could breathe easier. Lesson learned!
