Zoo Lights and Spicy Chicken Wraps

16. Go to Zoo Lights at the Denver Zoo

Last weekend C and I were invited to go to Zoo Lights for girl's night (plus C) with D, her two girls, and her mom. We decided to meet around 6 PM and when we arrived we were greeted by hordes of people and a lack of parking spots. I've never seen the zoo that packed before. Once we got inside everyone started to disperse so it wasn't too bad. It was an absolutely beautiful night and we probably couldn't ask for another December night as warm as that one.


Every Christmas season 38 acres of the zoo are decorated with Christmas lights and animal figures and animations made out of the lights. A few of my favorites that we saw this year: a mommy lion laying down and looking to the left and right as her cub pokes his head out one side of a log, then the other side; a whole grassy area full of sea creatures; elephants spraying "water".


We all had a great time and will certainly be doing it again. In fact, the whole family got tickets from the neighbors for Christmas so we will be going twice this year! E has never been and C loved all the lights so I know everyone will appreciate the chance to go again. Plus, we may have been given a giant thermos and all the fixin's for some "spirited" hot chocolate to take along with us.....

83. Try a new recipe every month (7/33)

Yesterday afternoon I threw all the ingredients for the Crock Pot Tex-Mex Chicken Lettuce Wraps recipe from Eat Live Run that I found on Pinterest. It was incredibly easy to make, healthy, and absolutely delicious.


Ingredients:
1 1/2 lbs chicken breast
1 1/2 tbsp taco seasoning
1 jalapeno, seeded and sliced
1 16 oz jar of salsa
1 onion, diced
salt, as needed (I did not add any salt)
iceberg lettuce leaves for wrapping (I used Romaine)

Sprinkle both sides of the chicken with the taco seasoning and place in the crock pot.

Top with the onion and jalapeno, followed by the jar of salsa. Place the lid on the slow cooker and cook on Low for 4-5 hours.

Before serving, shred the chicken using two forks. It should be really easy to shred. Stir to combine the chicken and sauce. To serve, scoop chicken mixture onto a lettuce leaf, roll up, and enjoy!

The recipe states that it is 4-6 servings. We split it up into 6 servings but I think it could easily make 8.
